The success of New Mexican cooking is that the flavors and even some of the dishes were borrowed from south of the border and then given a new touch that made them New Mexican. For example, a simple Mexican salsa becomes a colorful thing filled with bright yellow corn kernels, shiny black beans, and chopped bits of sweet red pepper.
