New Mexico was once part of the country of Mexico and the state has never forgotten it. From the halls of the New Mexico culinary school where you are studying, to the smallest towns and the biggest cities, the tastes and sounds of Mexico are everywhere in the state. The architecture is influenced by Mexican style and the countryside even looks like areas of northern Mexico. It shouldn't come as a surprise then that the cuisine leans heavily on Mexican cooking traditions. However, it is not purely Mexican food. The success of New Mexican cooking is that the flavors and even some of the dishes were borrowed from south of the border and then given a new touch that made them New Mexican. For example, a simple Mexican salsa becomes a colorful thing filled with bright yellow corn kernels, shiny black beans, and chopped bits of sweet red pepper.

Other purely local dishes you'll meet as a student at a New Mexico culinary school include caldillo, a beef-based soup, New Mexican chile soup, and more salad variations than you can imagine.

When you're not in cooking classes, you can stroll through old Santa Fe, a charming area with unusual shops and an amazing concentration of artists and artisans.
